Shrimp Zucchini

SIGH.  What can I say! I instantly fell in love with this new dish.  ME ENAMORE like my hubby says when he saw me for the first time. HAHA.  I LOVE mariscos and although I do love pasta, processed carbs don't set well in my stomach.  Therefore, substituting the zuchinni noodles for the pasta was just perfect-O!  If you’ve never tried zucchini noodles (also known as “zoodles”), now is the perfect time.  Not only are they low carb, they’re also easy to cook, and make a great substitute for pasta noodles! 

If you’re already a fan of zucchini noodles, I guarantee that you’ll love them even more.  You can use a "spiralizer" if you have one to make the noodles, but I kept it simple and just used my papa peeler-- c'mon-- cooking is not suppose to be complicated or you can just use real noodles (lol)!

The funny thing is that one day, my oldest son Luciano walked into the house from school and ran into the kitchen and said, "Mamma, I don't know what you're cooking but I NEED SOME OF THAT!"  Even his friend said he would eat it even though he doesn't eat veggies. lol kids are so honest!

It was definitely the combination of the grilled shrimp in kerigold unsalted butter, garlic powder, and lemon TOPPEDd with parmesean cheese that sealed the deal! QUE SABROSO! 

You can't see it here but I also added some queso fresco, mozzarella cheese, red pepper flakes, and tapatio to take this one-of-a-kind dish to a whole new level of cooking for me. I almost made some of my spicy salsa, but then I was just overdoing it. I must have been starving when I was cooking this meal-- that's what usually happens when I'm hungry.  I'll see what I have in the fridge and just start creating meals.

Now, if you're not a mariscos kinda person, don't worry-- there are plenty of other meats you can add to this dish- boneless skinless chicken breast, lean ground turkey, or lean ground angus beef! Wow!





Ingredients;

  1.  1 lbs shrimp (peeled and deveined-- just go to Costco!)
  2. 3 zucchinis (if you're making the entire pound of shrimp)
  3. 2 tbsp olive oil
  4. 2 tbsp unsalted kerigold butter
  5. salt and pepper
  6. ¼ cup Parmesan cheese
  7. ¼ cup Queso Fresco
  8. ¼ cup Shredded Mozzarella cheese
  9. 1 tbsp garlic powder
  10. 1 lime
  11. 1 tbsp red pepper flakes (optional)
  12. Tapatio (optional)


Instructions:

  1. Preheat grill for medium heat.
  2. In a small bowl, crush the garlic with the salt. Mix in red pepper flakes and paprika, and then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with garlic paste until evenly coated.
  3. Lightly oil grill grate. Cook shrimp for 2 to 3 minutes per side, or until opaque. Transfer to a serving dish, garnish with lemon wedges, and serve.
