Homemade Chicken Chile Verde
Chicken does NOT have to be boring. This is a recipe traditionally made as a pork dish in many Mexican Restaurants and homes. This is also one of my mother's BEST creations that I have taken and given it a "healthy" twist. This main dish is so full of flavor, you won't even think it's healthy. Enjoy.
Directions:
To make homemade green sauce-
Boil chiles, bell pepper and tomatillos in 3 cups water. When tender, place all ingredients in blender with 1 cup of the boiled water. Add garlic powder, and cumin. Blend.
Ingredients:
4 chicken breasts (cut into small chunks)
1 bell pepper
4-5 jalapeƱos
2-3 serranos
5-6 tomatillos
1tbsp Pink salt
1 tbsp Black Pepper
2 tbsp Garlic Powder
1/2 tbsp Whole Cumin
Cook chicken. Add black pepper and salt. Cook thoroughly.
Once chicken is cooked, add sauce. Bring to a boil then let simmer for about 10 minutes. You can make sauce as thick or runny as you'd like. Serve with brown rice and/or black beans for a healthy meal without sacrificing the flavor.
