Baked Tortilla Crusted Tilapia Tacos con Red Bell Pepper Hummus

These have to be ONE of my favorite "healthy" taco creations since making clean eating a lifestyle!

It all started with discovering this Red Bell Pepper Hummus at Fresh N Easy before stores all over the U.S. closed (which I was very DEVASTATED!)  Shortly after the closing of my favorite go-to fresh food store, I found the new hummus at Costco. It quickly became a huge hit as a snack with baby carrots and one day that I was out of plain greek yogurt as a spread for my tacos, I discovered the amazing sabor of Red Bell Pepper hummus--- the taste reminded me of the refried frijoles I make with beef chorizo & jalapeno juice, so right away I was HOOKED and so was the viejo!  The rest is history! 

The Tilapia is also another great find from Costco.  Its actually covered in crushed tortilla-- I'm telling you--- this journey to a healthier lifestyle has been nothing short of rewarding in discovering so many new SABORES in all my comidas favoritas! This Fit Latina Momma is never deprived of comida deliciosa and neither is my familia.  My mama taught me well!  "Como bien, mija"- she tells me!



Ingredients:
  • 1 box Tortilla Crusted Tilapia (Costco)
  • 1 package Factory White Corn Tortiallas (tastes homemade!)
  • 1 head of fresh lettuce or cabbage (totally up to you!)
  • 2-3 Roma Tomatoes (diced)
  • Red Bell Pepper Hummus (just buy the container from Costco)
  • Tapatio (optional-- but a must for this Latina)
  • Lemon (non-negotiable with seafood)

Directions:
  1. Bake Tilapia according to instructions on box (so simple-- follow the instructions). 
  2.  While Tilapia is baking cut up the lettuce or cabbage, tomatoes and place in separate containers. Set aside.
  3. Heat Tortillas about 2-3 minutes before fish is done baking. I hope you've done this before!
  4. Place 2 tortillas on a plate. Spread 1 tbsp of hummus on each tortilla (less is ok).
  5. Place 1 piece of fish on each tortilla.  If piece of fish is too big, half each fish (but trust me, you'll want 1 fish per taco. These are meant to be BIG tacos-- why not? SI SE PUEDE! Ha!
  6. Top with 1/2 tbsp of hummus, 1/2 cup veggies each taco, tapatio, and squeeze some lime!
